HONey Semifreddo

Honey Semifreddo is mildly sweet, velvety, smooth semi set ice-cream.  Semifreddo is a semi frozen italian dessert which tastes like an ice cream but is much lighter. As it is half frozen Semifreddo is more velvety even right after you take it out of the freezer.
Semifreddo is usually made without a ice cream maker. But i tried it with the ice cream maker and it made the process so much more quicker and easier. 
I am a part Culinary Council of KitchenAid India. And the recipe for Honey Semifreddo is my contribution to their Blog. Hence i have mostly used KitchenAid Products.
Products Featured


1 no – Egg 

4 nos – only egg yolks

100 gms – Honey

300 ml – Heavy cream

3 nos – Peaches

2 tbsp – Granulated Sugar

Mixed berries and mint leaves for topping



Freeze the Icecream maker for atleast 15 hours.

Whisk the egg and egg yolks with the honey in a bowl using balloon whisk attachment of the KitchenAid Cordless Handblender , over a saucepan of simmering water. Whisk until the mixture is pale, creamy and thick.

Whip the heavy cream until thick, in a seperate bowl and then gently fold in the egg and honey mixture..

 Attach the Icecream maker attachment to the Stand mixer as per instruction.

Start churning the ice cream maker on speed 1. Pour the cream mixture gradually into the Icecream maker. Churn it for 20 minutes.
*If you do not have an ice-cream maker you can pour the mixture directly into the moulds and set it.
Line KitchenAid Muffin tray or KitchenAid loaf pan with cling film with little extra hanging out to help you pull the semifreddo out. Pour the mixture into the prepared tins and freeze for an hour or two. 
In the meantime slice peaches. Sprinkle granulated sugar over it. Put them in KitchenAid square pan and roast it in a 180°C  pre heated for 15 minutes or till the peaches are soft and started to caramelise . Refrigerate them till you are ready to serve the semifredo. 
To serve unmold the semifreddo and place it on the serving plate.  If you have set it in a loaf pan, remove the semifreddo from the pan and slice it up, to serve.
Drizzle honey and top it with roasted peach and berries.

*Use only fresh eggs, otherwise semifreddo might taste eggy.
