CHOcolate Crinckle Cookies 

  
This is my 4th cookie from the cookie box for this Christmas. Christmas is celebrated in our house just for the sake of my kid. 

Decorating the tree, writing a letter to Santa all this is something he has learnt watching movies. He even asked me how the Santa is going to come home, as we do not have a chimney 😀 . I told him he will come through the chimney that’s there on top of my hob 😀.

  

As the belief goes, Santa will come at night and have the cookies and milk that has been kept for him. Right? So he wanted me to make cookies for Santa, that Santa would  dunk in some milk and have, before leaving the gift. So i told him “Why don’t you make it? Santa will enjoy that more”. He loves helping me while i bake and this gave him a better reason to help me 😊

  

Chocolate Crinckle  Cookies are Chewy in the centre, crisp outside. Get your kids to make these and they’ll love it and so will Santa 😊

  

Ingredients 

1 cup – Unsweetened cocoa powder

2 cups – Castor sugar


113 gms – Unsalted butter, softened

4 nos – Eggs

2 tsp – Vanilla extract


2 cups – All-purpose flour

2 tsp – Baking powder

1/2 tsp – Salt

1/2 cup – Icing sugar

  

Method 

.Cream together sugar and butter using a hand blender. Beat in eggs one at a time, and mix till well combined. Then stir in the vanilla.

.Once mixed add in the cocoa powder slowly making sure to mix very well.
.Combine the flour, baking powder, and salt and add into the cocoa mixture. Mix very well. The dough will be very very sticky. Spoon the dough onto a clingfilm and Cover the dough and refrigerate overnight. The longer the dough is chilled, the easier it will be to handle.

.Preheat the oven to 180°C and line the baking tray with parchment paper.

.Divide the dough into three parts. With one part make 1-inch balls and place them on the parchment-lined cookie sheet. Dampen your palms while making the balls and make them as smooth as possible. Chill the cookies for 10-15 minutes to firm them back up.

.Put the icing sugar in a bowl. Roll each chilled dough ball in the sugar, making sure to coat the cookie as much as possible. Place the cookie balls back onto the parchment-lined cookie sheets.

.Bake in a preheated oven for 10 to 12 minutes. Do not overbake or they will get very hard. Once done, let stand on the cookie sheet for a minute before transferring to wire racks to cool. Repeat this with the other two parts as well.
.Store the cookies in an airtight container.
