Burnt Orange Panacotta, has a caramalised orange flavour to it. Served with orange chips makes it more exotic
1 cup – Fresh cream (amul fresh cream)
1/2 cup – Milk
1/2 tbsp – Gelatin powder
1/4 cup – Sugar
1 tbsp – water
2 nos – Oranges
Grated peel of one orange
.For the Burnt Orange Panacotta, first lets start with the orange chips.
.Slice 1 orange into 5mm thick slices. Sprinkle some sugar over it and Bake in a 100°C preheated oven for 2 hours, or till it gets crisp.
.Take 1 tbsp room temperature or cold water in a small bowl and sprinkle 1/2 tbsp gelatin over it and set it aside for 5 minutes to bloom.
. To start making the burnt orange Panacotta, boil the juice of the remaining one orange in a saucepan on a high flame.
. Keep the flame high and you will see that the juice will start caramelising and start giving a burnt smell.
.let the juice reduce to half.
. To this add milk and cream. Just heat the milk. Do not boil it. Add sugar and grated orange peel to this and stir till the sugar dissolves.
.To this add the bloomed gelatin. Keep stirring and let the gelatin dissolve. Rub the cream mixture between two fingers to make sure gelatin is dissolved.
.Seive this mixture into a jug to remove any leftover particles of gelatin and the orange peel.
.Pour this mixture equally into the glasses.
.Let it sit on the counter top for 15 minutes and the refrigerate it overnight.
To serve, add the orange chip over the Panacotta and serve chilled.
