Granola cookies are just an other variation to the granola bars. Its easy to make, packed with dry fruits and nuts this is a healthy and a guilt free cookie, a great snack for kids, carry to office to munch in between meals or to serve with tea.

1 cup – Oats
1/2 cup – Wheat flour
1/4 tsp – Baking soda
1/4 tsp – Salt
1/2 tsp – Cinnamon powder
1/4 cup – Unsalted butter, room temperature
1/4 cup – Honey
1/2 no – Egg ( i divide the egg approximately into half)
1/2 tsp – Vanilla extract
3/4 cup – Mixed dry fruits (raisins,walnuts, dried blueberries, dried cranberries, chocochips, sunflower seeds, flaxseed)
Preheat the oven to 180°C. Line the baking tray with parchment paper.
Add butter and honey into the bowl of the stand mixer. Cream the butter and honey until light and fluffy, about 3 minutes. Beat in the egg and vanilla and beat till well combined. Do not over beat as it will curdle the mixture.
Reduce the mixer speed to low and stir in the dry ingredients, mixing until well combined.
Mix in the dry fruits. Use a tablespoon to scoop the dough out. Make smooth balls and place them onto the baking sheet. Press the dough balls to cookie shape. They will not spread while baking and hence you can place them closer.
Bake for 15 mins or till the cookies turn gold. And the base is brown. Cool it over a cooling rack and store it in a airtight container.
