DANish Butter Cookies



200 gms – Unsalted butter, softened
150gms – Icing sugar
310gms – Plain flour
1 no – Large egg, fresh
1 no – vanilla bean
1 to 2 tbsp – Milk
2 tbsp granulated sugar, for decoration


Preheat oven to 180°C.
Line a baking tray with baking paper.


Cream the butter , vanilla and icing sugar till and fluffy.
Add the egg and beat till well mixed.
Add the flour and fold using a spatula till the mixture comes together. If the mixture is too dry, add the 1 tbsp to 2 tbsps of milk until a soft but firm batter is formed.

Create the cookie shapes using piping bag or simply dropping a tsp of batter onto the sheet. Spring some sugar (optional) and
bake for 10-15 minutes or till the cookies turn nice and gold

Let cool for 10 minutes on a cooling rack then sprinkle with icing sugar.
