CHOcolate Cake

25 gms – Cocoa Powder
50 gms – Dark brown sugar
125 ml – Boiling water
60 gms – Soft unsalted butter
125 gms – Caster sugar
110 gms – All purpose flour
1/4 tsp – Baking powder
1/4 tsp – Baking soda
1 tsp – Vanilla extract
1 no – Egg

Grease and dust a 9″ cake pan.
Mix dark brown sugar and cocoa powder in boiling water till well mixed.
Sift flour, baking powder and baking soda a couple of times.
Preheat the oven to 170°C.

Cream butter and caster sugar till light and fluffy. It will take a couple of mins. To this add vanilla extract and beat for a few seconds. Break the egg into this and a tbsp of the flour mixture and blend till mixed. Adding that one tbsp of flour will prevent the mixture from curdling.
Keep mixing and incorporate the rest of the flour mixture. Finally pour inthe cocoa and dark brown sugar mixture and fold it well using a spatula.
Pour the batter into the tin and bake for 30mins, or till the skewer comes out clean. Do not bother about the cracks. They are a part of the cake and they enhance the beauty of the cake. They make the cake feel homely…

Serve it hot or cooled with a dollop of fresh whipped cream or dust it with some cocoa powder and some berries
