This is the first one for the fig season. It is so easy and simple that you can make it when the guests are having their dinner. A simple and light dessert that i absolutely love making. The rich sunset orangy coloured sauce along with the pinkish green pistachios is a beauty to look at.

5 nos – Fresh Figs
3 tbsp – Sugar
3 tbsp – Unsalted buttet
1 tsp – Rose water
1 pinch – Cinnamon powder
Pistachios for garnishing.

Preheat the oven to 200°C.
Quarter the figs making sure you do not cut it till the base. Just open up at the top and widen the mouth with your hands. Nigella lawson describes this as small birds opening their mouth and looking up, waiting for their mommy bird to feed them worms :) AWWwww…. Place these figs closely packed in a baking dish.

In a saucepan, melt butter, sugar ,cinnamon powder till the sugar dissolves. Add rose water to this . Pour this mixture over the figs generously.

Bake it in the oven for 10 to 15 mins or till the tips of the figs turn gold. They come out roasted and the sauce bubbling below them.

Serve it hot. Drizzle the sauce over the figs , sprinkle some pistachios and serve it with a dollop of cream beside it.
