The lemongrass growing in my balcony shouts out to me every single day. I love lemon grass in my tea. I love the smell of this grass. So oriental, so lemony, so fresh. I had always wanted to use it in things other than tea and thai curries. And hence ended up making this cake. Though after baking i could make out lemon grass flavour in it, it wasnt enough for my choice. I would want to try with more of grass next time.
This cake is dedicated to my friend and our chai time…
3/4 cup – Butter
1 1/2 cup -Sugar
4 nos – Eggs
3 tsp – Baking powder
2 cup – Flour
1 1/4 cup – Milk
4 nos – lemongrass
Pre heat oven to 180°C.
Beat egg whites in a very very clean bowl till it is firm.
Seive and mix flour and baking powder and keep aside.
In an other bowl cream sugar and butter. Add egg yolks. Lightly mix flour and baking powder mixture and add alternately with lemongrass milk. Fold in the egg whites in three parts. First two times mix the egg whites well ( lightly ). Third part fold it hently and dont mind if the egg whites dont mix completely. Bake in prepared pan for 45 minutes to 1 hour or till the skewer comes out clean.
