UPIttu (upma)

  


This used to be my most hated dish as a kid. And most of the kids i knew also hated it. We had all weird names for this dish. We called it cement, concrete etc etc.
My mum used to plate it in so many ways to make me just eat it,but…….
Its one of the easiest dishes to make and now i know thats the readon all the moms end up making it so often. Though i do not make it so often, i make it atleast once a week. And hence i had no option but to make it in different varieties.
At the end i will give you ideas on how you could make small variations to this dish and not make it the same everytime.

1 cup – Sooji (Rava, Semolina)
2 cups – water
1 cup – Mixed veggies (beans, carrot, peas, potato, capsicum)
2 tbsp – Oil
1 tsp – Rai ( mustard)
1/2 tbsp – Chana dal. (bengal gram)
1 tsp – Jeera (cumin)
1 no – Curry leaves
1 tbsp – lemon juice
3 nos – green chillies slit ( more or less depending on your taste)
1/2 tsp – Grated ginger
1 tsp – Sugar
Salt to taste


Method
In a kadai roast the sooji with 1/2 tbsp of oil, till it turns gold. Remove it onto a plate. Spread it and let it cool while you prepare your tadka.

Take the remaining oil in the kadai. To this add rai. Once it splatters, add chana dal. When the dal turns gold add curry leaves and green chillies. Leave it for half a minute and then add the finely chopped veggies to this. Add salt saute for a minute, cover and let the veggies cook well( i like the veggies half done, when it is still crispy). Once the veggies are done to your choice, add 2 cups water into the kadai. Add anymore salt if required, sugar, ginger and lemon juice. Taste it at this stage to make sure the seasonings are ok. Let the water boil. Once it starts boiling well, gradually in a stream pour the sooji into it while continuosly stirring so that no lumps are left. Once its mixed well, cover it and cook it on low flame for couple of mins. Lift the lid and mix it.
Garnish it with grated coconut, chopped coriander.

  
  

Serve it with Chutney Pudi, Yogurt or Sev.

PS: 1.You can make upma just with peas and omit all the veggies.

2.Replace veggies with just onion and tomato.
3. Replace bengal gram , jeera and veggies with peanuts and onion respectively.
4. If you like your upma more watery then add 3 to 4 cups of water instead of 2 cups.
