SIMple fresh salad bowl

When you come back home after slogging in the office, sweating yourself in the gym or having had a heavy lunch, the only thing you need to have is a fresh, colourful , healthy, simple salad in a bowl with a light soup and a toast. Plate it up well, or rather bowl it up well and It’ll just be a treat to your eyes and to your taste buds and light on your tummy ( for people who want to watch their waist line at least once in a while, like me )

Serving for 2

Cucumber – 1 no.
Tomato ( cherry tomato or any crisp tomato) – 1 no.
Onion – 1 no.
Olives ( green or black) – 6 to 7 nos.
Dried blueberries – 10 nos. (Optional)
Caramalised Lychee – 4 nos. (Optional)
Mint leaves – 3 to 4 leaves

Extra Virgin olive oil- 2 tbsp
Ground black pepper – 1 tsp
Salt as per your taste
Honey – 1 tsp

Cut your veggies into Julienne, Chiffonade, Jardiniere, Brunoise, Macedoine and Paysanne ( i know it sounds all professional ) basically cut them all in similar shapes and size. I like julienne as it looks more delicate.
Arrange them all in a bowl.
Arrange them as if you are painting on a canvas. Your eyes should enjoy it before you take a bite.
In a small bowl mix all the ingredients for the dressing. Drizzle it over the salad or serve it on the side.

Throw in any other veggies that you love. Bell peppers, sweet snap peas, lettuce, chinese iceberg will all go well.
Eat n feel light ….
